Loaded Mashed Potatoes


A quick and easy way to jazz up plain mashed potatoes. There's no limit to what you can add to yours. Pretty much any cheese will work, I've added sharp cheddar here. Then add bacon, diced onion and whatever else you like to your potatoes. These make a great side dish or meal on their own!

Loaded Mashed Potatoes
Serves 4

Prep Time: 10 minutes
Cook Time 15 minutes

Ingredients
4-6 russet potatoes, peeled and cubed
1/2 cup plain yogurt
1/4 cup milk
2 tbsp butter
2 pieces bacon, cooked, chopped
2 green onions chopped
2 tbsp minced red onion
3/4 cup grated sharp cheddar cheese
1 tbsp onion powder
Pinch each salt and pepper

Directions

  1. Boil potatoes in a pot of salted water until tender. Drain.
  2. Wile potatoes are boiling, cook bacon and chop onions, grate cheese.
  3. While potatoes are still warm mash with milk and butter. Stir in yogurt.
  4. Add all other ingredients. Re-heat if needed before serving.
